One of the perspective modern directions in manufacturing caramel with filling - is improving the quality, nutritional and biological value, taste qualities of products, further expanding their range, taking into account market demand, development and implementation of technologies and products of functional therapeutic and prophylactic purposes. The purpose of the experimental study is to determine the ratio of beet and pumpkin puree, suitable for multicomponent filling and identifies the impact of fruit and vegetable raw materials on the organoleptic and chemical characteristics of multicomponent fillings.
