Food and in particular baking, industry is one of the leading places in the industrial complex Orel region, with significant impact on the regional economy. Modern bread making is a dynamic, constantly evolving system, which includes logistical, informational, organizational and scientific support. An important trend in the development of this production in our country and region is to increase the nutritional value of bread. This is achieved by expanding the range of products dietary purposes, mainly due to the enrichment of products vital and irreplaceable nutrietami.
